Creamy Sausage Tomato Soup

This was supposed to be a simple recipe I just quickly threw together. Then I took a bite and knew you would love it, too.
The recipe is easy to prepare, and it’s packed full of flavor in every single spoonful.
Oh, and the best thing about this recipe–you can mix and match the ingredients to make it work with your pallet. Perfect, right?

“How did you have time to make this?” Shawna from Dance Into Love (The Winters Family Book Four) smiled and grabbed another spoonful of the soup. “This is so good.” She moaned the moment it hit her tongue.
Danny reached over and squeezed her thigh. “When you said you needed an extra thirty minutes with Anya to help with a few of the dance moves in our routine; I figured I had more than enough time to make some dinner.”
“You’re too good to me.” She stood, took the couple steps separating them, and used her foot to push out his chair. Then she settled down on his lap. “Thank you.” She combed her fingers through his hair.
He tugged her body closer and kissed her shoulder. “What was that? A new dance move?” Danny tickled her side and wrapped his arms around her waist.
“Maybe.” She brushed her nose back and forth against his nose. “Tell me there’s more?”
“The recipe made way more than I expected. We have a lot.” He jokingly pulled her to the side to grab a spoonful of the creamy sausage tomato soup.
“Am I in your way?” Shawna playfully moved back and forth trying to make it more difficult to grab another spoonful.
“No–“ he tightened his hold and managed to dig his spoon back into the bowl– “You’re exactly where you’re supposed to be.”

You definitely don’t need to use sausage. Chicken or even extra veggies would be amazing with all the delicious ingredients. Have fun with the recipe.
At the time I’m writing this lovely recipe, it’s officially soup season. Now, for me personally, soup season is all year long.
Oh, and you may want to pick up a crusty loaf of bread; it would be the perfect compliment.

Ingredients

1 lb ground spicy sausage, browned

3-4 cloves garlic, minced

1 medium onion, diced

2 large carrots, diced
-
8 oz cream cheese
-
1 cup half and half (or favorite milk)

32 oz tomato soup
-
15 oz sliced mushrooms
-
15 oz diced spicy tomatoes

1 tsp Italian seasoning (see notes below)

½ to 1 tsp red pepper flakes (optional)

Salt and Pepper

Vermouth (see notes below)

Hot Sauce
-
Sour Cream
-
Shredded Cheddar Cheese

Directions
Brown sausage in large pot over medium-high heat. Remove browned sausage from pan and set aside.
Leave all the remnants of the browned sausage in the pan, add onions, carrots, and garlic. Let the vegetables cook for about 5 minutes. Add ¼ cup of vermouth when sautéing vegetables. You want the onions to be translucent and the vegetables to be partially cooked (they don’t need to be soft).
Next, add the cream cheese and let the cream cheese melt and mix into the vegetables.
Now add the rest of the ingredients, cooked sausage, half and half, tomato soup, mushrooms, diced tomatoes, Italian seasoning, salt and pepper. Let the ingredients cook together. Bring the soup to a boil and then move it down to medium to low heat and let it simmer for at least 30 minutes (or longer).
Time to enjoy!
You can top your soup with sour cream, cheese, hot sauce, and/or chopped fresh parsley. Get creative with YOUR bowl of soup.
Recipe Note
This soup can be easily interchanged. You can remove the protein or switch to a different protein.
The ground sausage I used was spicy, you can use your favorite sausage.
The Vermouth is an optional item that adds some extra flavor to the soup. You just need about 1/4 cup when sautéing the vegetable.
I ran out of Italian seasoning, so I used 1/2 tsp dried basil, 1/2 tsp dried thyme, 1/2 tsp dried oregano.
