Your Very Own Mug Cake

It’s a mug cake that is the size of your head! Okay, that’s not true, but it’s huge and can hold a lot of goodies.
The recipe is quick and easy to prepare in the microwave. Even better, using a 20-oz coffee mug is like enjoying a slice of cake topped with your favorite fruit or frosting.
The recipe is called your very own for a reason: because you can add all your favorite ingredients or, like we did, make one of the cakes gluten-free. It’s also the perfect recipe to make with your kids.
SOME BOOK INSPIRATION:
“I need something sweet.” Eddie from Light My Heart (Crystal Shores Book One) grabbed his plate and carried it to the sink. “Hmmmm… what’s sweet?” He bent down and slowly walked toward Kelsey’s chair.
She burst out laughing and attempted to hop off. “Daddy.” He reached out and grabbed her before she could make her escape and peppered her with kisses all over her face.
“Okay, while I do agree, she is pretty sweet, I have another idea.” Sarah laughed and carried some dishes to the sink. “How about we make mug cakes?"
Eddie and Kelsey both went wide-eyed and yelled at the same time, “Yes!”
“I think she may be on to something.” Eddie gave Kelsey one more kiss before letting her down.
“Can I add blueberries to mine?” Kelsey climbed onto the barstool and rested her hands on the counter to watch Sarah prepare the dessert.
“It’s your cake; you can add anything you want.” Sarah walked over to the pantry and started to pull out the dry ingredients. “What should I add to mine?”
“Chocolate.” Eddie stepped up behind her, wrapped his arms around her waist, and kissed her neck.
“Interesting. Or, I could add some apples and cinnamon.” She kissed his cheek and stepped out of his embrace to grab three large mugs.
They spent a few minutes mixing the ingredients in the mugs, and then Kelsey helped her carry them to the microwave.
Two minutes later, they each had a delicious cake.
“Oh, look at that space we still have in the mug. Should we add anything else?” Sarah grabbed three spoons and brought them over to the table.
Eddie sat Kelsey’s mug in front of her right as she hopped up and sat on the chair. “What do you think?” He kissed his daughter’s temple. “Frosting.”
“And more blueberries.” She leaned up and glanced into her mug. “Yum.”
BEHIND THE SCENES
The mug cake recipe was first made in 2022, called The Gigantic Mug Cake.
Here’s the funny part: I remade the recipe last week. Can you guess what happened? There was too much batter in the 20 oz mug, and it basically overflowed. It was pretty funny and also messy.
The messy microwave oven is why I’m going back and remaking and adjusting these old recipes for you.
The updated mug cake recipe was half the amount of the original version. Since I cut it in half, you can see how the mug is not full of cake. Then, I realized that you can easily add frosting, fruit, more chocolate chips, or whatever you want with the available extra space.
If you want more in your mug, don’t double the recipe. You’ll end up with the same mess in your microwave. Maybe get a bigger mug or even bowl.
Another thought: you can do some math and add a quarter of the original recipe for some added cake in your mug. (I just cut the original recipe in half because math hurts my head, LOL!)
Ultimately, you can see this recipe is not set in stone. You have a framework and then have fun adjusting for your mug or what makes you happy.

Ingredients

3 Tbsp butter, melted

¼ cup brown sugar, packed

¼ cup milk (use your favorite)

1 ½ tsp olive oil

1 tsp vanilla extract

¼ cup all-purpose flour sifted
-
1 tsp baking powder sifted

Pinch of salt

Optional-Handful of chocolate chips or frozen/fresh blueberries
Directions
Note: This recipe is made in the microwave and uses a 20 oz coffee mug.
In a coffee mug, add butter and melt in the microwave for 20-30 seconds.
In a coffee mug with melted butter, whisk the brown sugar (I used a fork) until it thickens. Then add in the milk, vanilla, and oil. Whisk until it’s well incorporated.
In a separate bowl, sift the flour and baking powder.
Add the flour, baking powder, and salt to the wet ingredients and stir (but don’t over-stir).
The batter should be loose but not runny. If it appears dry or too thick, you can add a small amount of milk (a little goes a long way).
Microwave on high for 2 minutes. (If the top appears runny or the batter still looks raw, microwave for an additional 20-30 seconds.)
Top with sprinkles or chocolate chips, and enjoy!
Recipe Note
Gluten-Free Mug Cake Option
Ingredients
3 Tbsp butter, melted
1/4 cup coconut sugar (or your choice for sugar)
1 Tbsp honey
1/2 cup milk (use your favorite)
1 Tbsp olive oil
1 tsp vanilla extract
1/4 cup GF flour (I used King Arthur GF flour)
2 Tbsp almond flour
1 tsp baking powder, sifted
1 tsp cornstarch
Pinch of salt
Optional–handful of chocolate chips or frozen/fresh blueberries
Directions
Same directions as above.
The only differences–It's okay to over-stir gluten free batter. Stir if for a few minutes, or until it starts to have a beautiful glossy finish.
NOTE FOR BOTH CAKE OPTIONS:
You could use a 15-oz mug. If the mug is too small there is a potential for the batter to overflow. For this recipe, there was room in the mug once the cake cooled and settled. The extra room could be used for toppings or frosting.
